How does technology benefit Pôpa wines?

In the alcoholic fermentation of our CONTOS DA TERRA wines, we use the so-called CUBAS WITH GANYMEDE SYSTEM.

And here we have an excellent example of how technology benefits Pôpa wines, preserving what the vineyard designed for each harvest.

Two fermentation vats have a capacity of 8,000 L and 10,000 L. They are achieving different automatic and reassembly systems, both accompanied by highly sophisticated temperature control processes.

This type of vat is the only system in the world to use the free energy that nature offers – it accumulates the CO2 released during the fermentation process and uses it to do the reassembly – exploring the wort 100%, without the aggression of pumps and mechanical systems.

It carries out the maturation and fermentation processes naturally, extracting the noble substances from the grape delicately and selectively, giving the wines superior qualitative characteristics. In the case of Contos da Terra, it is to preserve its aromatic and fruity side and its excellent colors.
